Line cook / chef de partie

Theodore Rex is looking for an experienced line cook or chef de partie. While we've been lucky to get all sorts of awards, our best attribute is that we train technically sound, responsible cooks, the type that we wish we could eventually offer a management role.

We offer a stable, 4 day schedule of around 42-45 hours week.

Cooks make 48k+ yearly, we offer $17-18/hr plus tips. We also offer vacation pay, sick pay, and health insurance.

Beyond that line cooks receive training in fundamental and modern cooking techniques, including whole protein butchery, pasta and bread work, sauce making, and efficient and effective line cooking. At Theodore Rex cooks get to see the whole picture of the food we make, meaning from where and when a product gets ordered, to when it comes in and gets processed and prepped, to how it gets cooked during service and brought to the guest's table. We believe that this approach allows a career-minded cook to gain a greater understanding of the kitchen and restaurant operations as a whole, and better prepares them for future opportunities both inside and outside the company. The ideal candidate cares about their work, is detail oriented, moves with urgency, and is receptive to coaching.

Theodore Rex is a small open kitchen, so that restricts the way we operate in certain ways. We require cooks to be organized during prep and service, as our small space doesn't allow for the alternative. Cooks are expected to work their station and run food to the dining room even during busy nights. There is a high degree of accountability that we ask for. We can be particular. This requires us to work as a tight-knit team, with everyone being on the same page. Food quality and guest experience is taken seriously, and everything that we do is with that in mind.

We are a small, 28-seat restaurant located in an old building in Houston s warehouse district just north of downtown. Theodore Rex is open Thursday Monday.
